Ingredients
  • 1 Pound Ground Beef
  • 1 Small Onion -- Grated
  • 1 Medium Egg
  • 1/3 Cup Rice -- Cooked
  • Salt And Pepper -- To Taste
  • 5 Cups Beef Broth
  • 1 Large Carrot -- Chopped
  • 1 Large Potato -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Can Chickpeas
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Paprika
  • Salt And Pepper -- To Taste
  • 2 Tablespoons Parsley -- Chopped
  • 2 Tablespoons Cilantro -- Chopped
  • Yogurt
Directions Combine meat, onion, egg, rice, salt and pepper. Form into meatballs. Combine broth, carrot, potato, tomatoes, chickpeas, cumin, paprika, salt, pepper, parsley and coriander. Bring soup to a boil, slowly add meatballs. Stir gently and simmer for 25 minutes. Serve with a dollip of yogurt.
