Uzbek - Kiukat Palov (Heab Plov)

Ingredients
|
- 2 Tablespoons Olive Oil
- 1 Medium Onion -- Chopped
- 1/2 Pound Ground Beef And Lamb
- Salt And Pepper -- To Taste
- 1 Pinch Saffron
- 1 Cup Parsley -- Chopped
- 1 Cup Cilantro -- Chopped
- 1/2 Cup Mint -- Chopped
- 1/2 Cup Dill -- Chopped
- 1 1/2 Cups Rice

Directions

Saute onion in oil until golden. Add meat, salt, pepper and saffron. Simmer for 10 minutes. Add 2 cups of water, bring to a boil. Add parsley, cilantro, mint and dill. Cover and simmer for 15 minutes. Add rice and cover by 1-inch of water. Cover and bring to a boil. Lower heat and simmer for 20 minutes. Remove from heat, stir well and let stand for 5 minutes. Serve.
