Uzbek - Lovia Oshi (Lamb And Bean Soup)

Ingredients
|
- 3 Tablespoons Olive Oil
- 1 Medium Onion -- Chopped
- 1 Pound Lamb -- Cubed
- 1 Medium Carrot -- Chopped
- 1 Can Tomatoes -- Chopped
- 1 Can Tomato Paste
- 7 Cups Beef Broth
- 2 Cups White Beans -- Cooked
- Salt And Pepper -- To Taste
- 1 Tablespoon Parsley -- Chopped

Directions

Saute onion in oil until browned. Add lamb and stir well. Saute for 10 minutes. Add carrot, tomatoes and tomato paste. Saute for 1 minute. Add broth and bring to a boil. Cover and simmer for 45 minutes. Add beans, salt and pepper. Simmer for 10 minutes. Sprinkle with parsley and serve.
