Uzbek   -   Lovia Oshi (Lamb And Bean Soup)   adapted from The Art of Uzbek Cooking by Lynn Visson

  • 3 Tablespoons Olive Oil
  • 1 Medium Onion -- Chopped
  • 1 Pound Lamb -- Cubed
  • 1 Medium Carrot -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Can Tomato Paste
  • 7 Cups Beef Broth
  • 2 Cups White Beans -- Cooked
  • Salt And Pepper -- To Taste
  • 1 Tablespoon Parsley -- Chopped
Directions Saute onion in oil until browned. Add lamb and stir well. Saute for 10 minutes. Add carrot, tomatoes and tomato paste. Saute for 1 minute. Add broth and bring to a boil. Cover and simmer for 45 minutes. Add beans, salt and pepper. Simmer for 10 minutes. Sprinkle with parsley and serve.
