Ingredients
  • 3 Tablespoons Olive Oil
  • 2 Large Onion -- Chopped
  • 1/2 Pound Beef -- Cubed
  • 2 Medium Carrot -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 2 Medium Potatoes -- Chope
  • 2 Cups Beef Broth
  • 1 Can White Beans
  • 1 Cup Rice -- Cooked
  • Salt And Pepper -- To Taste
  • Cayenne -- To Taste
  • 1 Tablespoon Cilantro -- Chopped
  • 1 Tablespoon Parsley -- Chopped
Directions Saute onion in oil until soft. Add meat and saute until browned. Add carrots, tomatoes and potatoes. Add broth and simmer for 15 minutes. Add beans and rice, season with salt, pepper and cayenne. Simmer for 5 minutes. Add cilantro and parsley and serve.
