Uzbek   -   Mash Kovok (Mung Bean And Pumpkin Soup)   adapted from The Art of Uzbek Cooking by Lynn Visson

  • 1 Small Onion -- Chopped
  • 1 Tablespoon Butter
  • 7 Cups Chicken Broth
  • 1 Cup Mung Beans
  • 1 Cup White Beans -- Cooked
  • 2 Medium Potatoes -- Chopped
  • 1 Small Butternut Squash -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Tablespoon Parsley -- Chopped
  • 1 Tablespoon Basil -- Chopped
  • Sour Cream
Directions Saute onion in butter until golden. Add broth and mung beans, bring to a boil. Simmer for 30 minutes. Add potatoes and squash. Simmer for 20 minutes. Add white beans, salt and pepper. Simmer for 5 minutes. Add parsley and basil. Remove from heat and serve with a dollop of sour cream.
