Uzbek - Mash Ugra (Meat, Mung Bean And Noodle Soup)

Ingredients
|
- 2 Tablespoons Olive Oil
- 1 Pound Lamb Or Beef -- Cubed
- 1 Small Onion -- Chopped
- 1 Medium Carrot -- Chopped
- 7 Cups Beef Broth
- 1/2 Cup Mung Beans
- 1 Medium Potato -- Cubed
- 2/3 Cup Thin Egg Noodles -- Cooked
- Salt And Pepper -- To Taste
- Yogurt -- Optional

Directions
|
Saute meat in oil until well browned. Add onion and carrot and saute for 5 more minutes. Add broth, bring to a boil, add mung beans, cover, simmer for 40 minutes. Add potato and cook for 10 minutes. Add noodles and heat through. Season with salt and pepper. Simmer for 5 minutes. Serve with a dollop of yogurt if desired.
