Uzbek   -   Mastava (Meat And Vegetable Soup)   adapted from The Art of Uzbek Cooking by Lynn Visson

  • 3 Tablespoons Olive Oil
  • 1 Pound Beef Or Lamb -- Cubed
  • 1 Medium Onion -- Chopped
  • 1 Large Carrot -- Chopped
  • 1 Large Turnip -- Chopped
  • 1 Can Tomato Paste
  • 6 Cups Beef Stock
  • Salt And Pepper -- To Taste
  • 1 Large Potato -- Chopped
  • 3/4 Cup Rice
  • 1/2 Cup Cilantro -- Chopped
  • Sour Cream -- For Garnish
Directions Saute meat in oil until well browned. Add onion, carrot, and turnip. Saute for 7 minutes. Add tomato paste, mix well, add broth and bring to a boil. Add salt, pepper, potatoes and rice. Reduce heat and simmer for 20 minutes. Add cilantro and serve.
