Uzbek   -   Mokhora (Meat And Chickpea Soup)   adapted from The Art of Uzbek Cooking by Lynn Visson

Ingredients
  • 3 Tablespoons Olive Oil
  • 1 Pound Beef Or Lamb -- Cubed
  • 1 Small Onion -- Chopped
  • 3 Medium Carrot -- Chopped
  • 2 Cans Tomatoes -- Chopped
  • 2 Tablespoons Tomato Paste
  • 6 Cups Beef Broth
  • Salt And Pepper -- To Taste
  • 2 Medium Potatoes -- Chopped
  • 1 Can Chickpeas
  • 1 Tablespoon Parsley -- Chopped
  • 2 Tablespoons Cilantro -- Chopped
Directions Saute meat in oil until well browned. Add onions and carrots. Simmer for 10 minutes. Add tomatoes and tomato paste. Simmer for 5 minutes. Add broth, salt and pepper. Bring to a boil, cover and simmer for 30 minutes. Add potaotes and chickpeas, simmer for 15 minutes. Sprinkle with parsley and cilantro and serve.
