Uzbek   -   Oshi Sholgom Kizilcha (Beet And Turnip Soup)   adapted from The Art of Uzbek Cooking by Lynn Visson

  • 7 Cups Chicken Broth
  • 2 Pounds Beets -- Diced
  • 4 Small Turnip -- Chopped
  • 1 Small Onion -- Chopped
  • 4 Medium Carrot -- Chopped
  • 2 Pounds Chicken Breast -- Chopped
  • 1 Teaspoon Cumin
  • Salt And Pepper -- To Taste
  • 2 Tablespoons Parsley -- Chopped
Directions Bring broth to a boil. Add beets, turnips, onion, carrots, chicken and cumin. Sprinkle with salt and pepper. Cover and simmer for 45 minutes. Sprinkle in parsley and serve.
