Uzbek   -   Sholgom Shurva (Meat And Turnip Soup)   adapted from The Art of Uzbek Cooking by Lynn Visson

  • 8 Cups Beef Broth
  • 1 Pound Beef Or Lamb -- Cubed
  • 2 Medium Turnip -- Chopped
  • 2 Medium Carrot -- Chopped
  • 1 Small Onion -- Chopped
  • 1 Small Red Bell Pepper -- Chopped
  • 1 Can Tomato Paste
  • 1 Medium Potato -- Chopped
  • Salt And Pepper -- To Taste
  • Cayenne -- To Taste
Directions Bring broth to a boil. Add meat, turnips, carrots, onions and bell pepper. Simmer for 30 minutes. Add tomato paste and potato, simmer for 15 minutes. Season with salt, pepper and cayenne. Serve.
