Vietnamese   -   Asparagus And Mushroom Soup   adapted from Vietnamese Cuisine by Muoi Thai Loangkote

  • 1 Bunch White Aspargus -- Cut In Half
  • 1 Cup Golden Mushrooms Or Any Kind -- Chopped
  • 4 Ounces Ham -- Chopped
  • 4 Cups Chicken Stock
  • 1 Tablespoon Ginger
  • 1 Tablespoon Fish Sauce
  • Salt And Pepper -- To Taste
  • 3 Tablespoons Cornstarch -- Mixed With
  • 3 Tablespoons Water
  • 2 Tablespoons Cilantro -- Chopped
  • 2 Large Scallion -- Chopped
Directions Bring stock, ginger, fish sauce, salt and pepper to a boil. Add asparagus, mushrooms, ham and cornstarch/water mixture. Bring to a boil, simmer for 5 minutes. Add cilantro and green onion, remove from heat and serve.
Serves 4
