Vietnamese   -   Beef In Tomato Sauce   adapted from Vietnamese Cuisine by Muoi Thai Loangkote

Ingredients
  • 2 Pounds Beef -- Cubed
  • 3 Tablespoons Fish Sauce
  • 1 Can Tomato Paste
  • 2 Cloves Garlic -- Chopped
  • 1 Medium Jalapeno -- Chopped
  • 1 Small Onion -- Chopped
  • 1 Tablespoon Galangal -- Chopped
  • 6 Cups Beef Broth
  • Salt And Pepper -- To Taste
  • 4 Medium Bay Leaves
  • 2 Medium Carrot -- Chopped
  • 1 Medium Turnip -- Chopped
  • 1 Lime Lime Juice
Directions Marinate beef in fish sauce for 20 minutes. Saute garlic, jalapeno, onion and galangal for 5 minutes. Add beef and saute until well browned. Add tomato paste, saute 1 minute. Add broth, salt and bay leaves. Cover and simmer for 1 hour. Add carrots and turnips. Simmer for 25 minutes. Remove from heat, add lime juice and serve over rice or noodles.
