Vietnamese   -   Beef Soup With Lemon Grass   adapted from The Classic Cuisine of Vietnam by Ngo and Zimmerman

  • 1 Tablespoon Lemon Grass -- soaked
  • Salt And Pepper -- to taste
  • 2 Teaspoons Fish Sauce
  • 1 Clove Garlic -- finely chopped
  • 6 Ounces Beef -- thinly sliced
  • 1 Teaspoon Olive Oil
  • 2 Large Shallots -- sliced
  • 3 Cups Beef Broth
  • 1 Tablespoon Cilantro -- chopped
  • 2 Medium Scallions -- chopped
Directions Sprinkle pepper, salt, fish sauce and garlic over meat. Marinate 10 minutes. Heat oll and fry shalots until brown. Add lemon grass, cook 1 min, Add meat, fry until brown on both sides. Add beef broth adn bring to boil. Sprinlke with garnishes and serve.
