Vietnamese   -   Congee Dalat (Vietnam)   adapted from Dining with Headhunters

  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Ginger Root -- finely chopped
  • 1 Tablespoon Garlic -- finely chopped
  • 1 Cup Rice
  • 4 Cups Pork Stock
  • 1/2 Pound Pork -- diced
  • 2 Tablespoons Fish Sauce
  • 1 Tablespoon Red Chile Oil
  • Bean Sprouts -- for garnish
  • Cilantro -- for garnish
  • Black Pepper -- to taste
Directions heat oil in stockpot. saute garlic and ginger for 3 minutes. add rice, broth, pork, fish sauce and chile oil. bring to a boil, reduce heat and simmer for 30 minutes. add black pepper and garnish with bean sprouts and cilantro.
Serves 4
