Vietnamese   -   Fish And Fresh Tomatoes (Ca Chien Sot Ca)   adapted from The Classic Cuisine of Vietnam by Ngo and Zimmerman

Ingredients
  • 1 Clove Garlic -- sliced
  • 1 Large Scallion -- chopped
  • 1 Large Tomato -- chopped
  • 1/4 Cup Olive Oil
  • 1/2 Pound Bluefish
  • 2 Tablespoons Fish Sauce
  • 1 Tablespoon Sugar
  • Salt And Pepper -- to taste
Directions Heat ooil over high flame, add fish.
Fry fish until well browned, remove and set aside.
Remove all oil but 2 teaspoons.
Add remaining ingredients, bring to boil, boil 1 minutes, pour over fish and serve with rice.
Serves 4
