Vietnamese   -   Fragrant Herb Chicken   adapted from Vietnamese Cuisine by Muoi Thai Loangkote

  • 2 Pounds Chicken -- Cubed
  • 3 Cloves Garlic -- Chopped
  • 1 Tablespoon Lemon Grass
  • 1 Tablespoon Oyster Sauce
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Red Wine
  • 1 Tablespoon Water
  • 1 Teaspoon Sugar
  • 1 Teaspoon Chili Paste
  • 1 Cup Basil Leaves -- Chopped
  • 2 Tablespoons Peanut Oil
Directions Saute in oil, lemon grass and garlic for 1 minute. Add chicken and saute until well browned. Add oyster sauce, soy sauce, wine, water, sugar, and chili paste. Saute until liquid evaporates. Add basil and serve over rice.
