Vietnamese   -   Hanoi Meat And Potatoes (Vietnam)   adapted from Dining with Headhunters

  • 1/2 Pound Beef -- diced
  • 1 Clove Garlic -- finely chopped
  • 1 Tablespoon Fish Sauce
  • 1 Teaspoon Black Pepper
  • 1/4 Cup Olive Oil
  • 1/2 Pound Potatoes -- 1/4 inch slices
  • 1 Medium Onion -- sliced
  • 1 Medium Scallion -- finely chopped
Directions combine beef, garlic, fish sauce, and pepper and marinate for 15 minutes. heat oil in skillet to medium high and fry potatoes until they are well browned. remove and set aside. pour out all but 1 tablespoon of oil. add beef mixture and onion. stir-fry till the beef is well browned and fairly dry. pour over potatoes and sprinkle with scallions.
