Vietnamese   -   Hot And Sour Cabbage Salad (Vietnam)   adapted from Spicy Vegetarian Cuisine

Ingredients
  • 1 Clove Garlic -- finely chopped
  • 3 Serrano Pepper -- chopped
  • 1 Small Scotch Bonnet -- finely chopped
  • 2 Tablespoons Lime Juice
  • 2 Tablespoons Apple Cider Vinegar
  • 1 Teaspoon Sugar
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Toasted Sesame Oil
  • 1 Pound Green Cabbage -- finely shredded
  • 2 Large Scallions -- chopped
  • 2 Radishes -- thinly sliced
  • 3 Tablespoons Fresh Basil -- chopped
  • 3 Tablespoons Fresh Cilantro -- finely chopped
  • 1/2 Cup Cashews -- for garnish
Directions In large bowl, combine everything down to the cabbage (dressing ingredients) then add everything but nuts and mix well. Chill 1 hour, before serving, sprinkle with cashews.
