Vietnamese   -   Shrimp And Crab Meatball Soup (Bun Tom Cua Thit Nac)   adapted from The Classic Cuisine of Vietnam by Ngo and Zimmerman

  • 1/2 Pound Rice Sticks
  • 1/2 Pound Shrimp
  • 6 Ounces Ground Pork
  • 2 Cloves Garlic -- finely chopped
  • 2 Medium Shallots -- finely chopped
  • 1 1/2 Teaspoons Salt
  • 2 Tablespoons Fish Sauce
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Sugar
  • 7 Ounces Crab
  • 6 Cups Water
  • 2 Tablespoons Cilantro -- finely chopped
Directions Cook noodles according to package directions. In food processor, mash shrimp slightly, the add pork and blend together. Transfer to a large bowl and add garlic, shallots, salt, fish sauce, black pepper and sugar. Add crab and mix well. Form into 36 balls. In large pot bring the water to a boil and drop meatballs in. Boil for 10 minutes. Fill individual bowls with noodles add 6 meatballs and enough broth to fill bowl. Serve.
