Vietnamese   -   Shrimp Rice Soup   adapted from The Classic Cuisine of Vietnam by Ngo and Zimmerman

  • 1 Cup Rice -- uncooked
  • 1/2 Pound Shrimp -- coarsely diced
  • 2 Tablespoons Fish Sauce
  • Salt And Pepper -- to taste
  • 3 Medium Shallots -- chopped
  • 1 Tablespoon Olive Oil
  • 1 Clove Garlic -- chopped
  • 2 Quarts Chicken Stock
  • Cilantro -- chopped
  • Scallion -- chopped
Directions Combine fish sauce, pepper, salt, shallots & shrimp. Heat oil in large pot. Add garlic, 1 mintues, add shrimp mixture, 3 minutes, add stock bring to boil, Add rice, simmer 20 mintues. Sprinkle with cilantro scallions and serve.
