Vietnamese - Shrimp Rice Soup

Ingredients
|
- 1 Cup Rice -- uncooked
- 1/2 Pound Shrimp -- coarsely diced
- 2 Tablespoons Fish Sauce
- Salt And Pepper -- to taste
- 3 Medium Shallots -- chopped
- 1 Tablespoon Olive Oil
- 1 Clove Garlic -- chopped
- 2 Quarts Chicken Stock
- Cilantro -- chopped
- Scallion -- chopped

Directions

Combine fish sauce, pepper, salt, shallots & shrimp. Heat oil in large pot. Add garlic, 1 mintues, add shrimp mixture, 3 minutes, add stock bring to boil, Add rice, simmer 20 mintues. Sprinkle with cilantro scallions and serve.
