Vietnamese   -   Vietnamese Roast Beef With Ginger Sauce (Be Thui)   adapted from The Classic Cuisine of Vietnam by Ngo and Zimmerman

  • 1 Pound Beef Fillet
  • 3 Tablespoons Roasted Rice Powder
  • 1 Medium Scallion -- shredded
  • 1 Tablespoon Sugar
  • 2 Cloves Garlic -- finely chopped
  • 1 Large Red Chiles -- chopped
  • 1 Inch Ginger Root -- grated
  • 3 Tablespoons Tuong
  • 2 Tablespoons Water
Directions Preheat oven to 350 degrees. Bake fillet for 30 minutes. Remove and cut fillet into 4 2x2 inch pieces. Arrange slices on platter and sprinkle on rice powder and scallions. In food processor, combine sugar, garlic, chili pepper and ginger. Make it into a paste. Stir in tuong and water. Place in a small bowl. To serve, give each person a slice of beef and pass the sauce.
