Ingredients
  • 1 1/2 Pounds Green Olives -- pitted
  • 3 Cups Beef Stock
  • 6 Cloves Garlic
  • 3 Tablespoons Fresh Parsley
  • 1 Pound Ground Beef
  • 1 Tablespoon Tomato Paste
  • 1 Small Onion -- chopped
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 3 Tablespoons Oil
Directions Cook olives in boiling water for 10 minutes. Drain, rinse, and return olives to saucepan. Pour beef stock over olives, add garlic & parsley. Boil. Meanwhile, combine ground beef, tomato paste, onion, salt & pepper. Make small meat balls. Add them to sauce pan, stir in the oil, cook over medium heat until liquid evaporates.
