Israeli and Jewish   -   Cheese Or Spinach Borekas   adapted from Taste Of Israel - Avi Ganor

  • 8 Ounces Filo Dough
  • 2/3 Cup Melted Butter
  • 1 Medium Egg Yolk -- beaten with
  • 1 Tablespoon Water
  • Sesame Seeds -- for garnish
  • ~~ Cheese Filling -- ~~
  • 1/2 Cup Feta Cheese
  • 1 Cup Gruyere Cheese -- grated
  • 2 Tablespoons Cream Cheese
  • 1 Large Egg -- beaten
  • Salt And Pepper -- to taste
  • ~~ Spinach Filling -- ~~
  • 1 Pound Fresh Spinach
  • 1 Medium Egg -- beaten
  • 1 Cup Gruyere Cheese -- grated
  • Salt And Pepper -- to taste
Directions Remove filo dough from refrigerator 2 hours before you need them. To make cheese filling, mash all ingredients together with fork or in food processor. To make splinach filling rinse spinach thoroughly, place in sauce pan. Cover simmer 4 minutes until tender. Drain & squeeze out excess moisture. Chop fine, combine with remaining ingredients. Preheat oven to 350*. Take 1 leaf of phyllo, cut into a stirip 6" by 12" and brush it with melted butter. Fold in half so it is teh same length, but 1/2 the width. Place a heaping teaspoon of either filling on one end. fold over to make triangle. Butter, fold, butter fold, until strip is completed. Repeat until all filling or dough is gone. Put completed triangles onto baking sheet, and brush with egg yolk. Sprinkle with sasame seeds, bake 30 minutes, or until golden brown on top.
