Ingredients

- 2 Pounds Chicken
- 4 Tablespoons Oil
- 3 Tomatoes -- sliced
- 7 Cloves Garlic
- 1/2 Cup Cognac
- 2 1/2 Cups Dry White Wine
- 2 Stalks Celery
- 2 Stalks Fennel
- 15 Green Olives
- 1 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
- 4 Bay Leaves
- 1/4 Teaspoon Thyme
- 1 Pinch Ginger

Directions
|
Saute chicken in oil, add tomatoes & 1/2 garlic. Reduce heat. When chicken browns, stir in cognac, wine, celery, fennel, olives, and remaining garlic. Cook 5 minutes. Add remaining ingredients, simmer 30 minutes.
