Ingredients
  • 2 Pounds Chicken
  • 4 Tablespoons Oil
  • 3 Tomatoes -- sliced
  • 7 Cloves Garlic
  • 1/2 Cup Cognac
  • 2 1/2 Cups Dry White Wine
  • 2 Stalks Celery
  • 2 Stalks Fennel
  • 15 Green Olives
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 4 Bay Leaves
  • 1/4 Teaspoon Thyme
  • 1 Pinch Ginger
Directions Saute chicken in oil, add tomatoes & 1/2 garlic. Reduce heat. When chicken browns, stir in cognac, wine, celery, fennel, olives, and remaining garlic. Cook 5 minutes. Add remaining ingredients, simmer 30 minutes.
Serves 4
