Israeli and Jewish   -   Hot Olive Salad   adapted from Taste Of Israel - Avi Ganor

  • 1 Pound Green Olives -- pitted Drained
  • 2 Large Tomatoes -- grated
  • 1/3 Cup Olive Oil
  • 6 Cloves Garlic -- finely chopped
  • 1 Tablespoon Tomato Paste
  • 3 Slices Unpeeled Lemon
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Red Pepper
  • Salt And Pepper -- to taste
Directions Put olives in saucepan, cover with water. Bring to a boil. Drain cover with water again and bring to a boil and drain again. In another saucepan, mix tomatoes with oil, garlic and tomato paste. Simmer for 5 minutes. Add olives, lemon slices, spices, salt and pepper. Mix well. Add a little water and simmer over low heat until the water is absorbed. Remove lemon and serve.
Serves 4
