Norwegian   -   Potato Mushroom Ragu   adapted from Classic Scandinavian Cooking By Nika Hazelton

  • 4 Cups Mashed Potatoes
  • 2 Medium Eggs -- Beaten
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1/2 Teaspoon Cardamom
  • 1 Pound Mushrooms -- Sliced
  • 2 Teaspoons Butter
  • 1 Bunch Chives -- Chopped
Directions Combine potatoes, eggs, salt and cardamon, mix well. Saute mushrooms in butter for 5 minutes. Place mushrooms in bottom of baking dish, top with potatoes, Bake until potatoes are slightly browned at 450 degrees, sprinkle with chives, serve.
