German   -   Gemusesuppe (Vegetable Soup)   adapted from German Cooking

Ingredients
  • 1/4 Cup Butter
  • 1 Large Onion -- Chopped
  • 1 Large Leek -- Chopped
  • 3 Medium Carrot -- Chopped
  • 2 Stalks Celery -- Chopped
  • 2 Quarts Chicken Broth
  • 1/2 Cup Corn
  • 1/2 Cup French-Style Green Beans
  • 1/2 Cup Peas
  • 1 Cup Egg Noodles -- Cooked
  • 1 Cup Shredded Swiss Cheese -- Optional
  • 1 Bunch Chives -- Chopped
Directions Saute onions, leeks, carrots and celery in butter for 10 minutes. Add broth and bring to a boil. Reduce heat, cover and simmer for 30 minutes. Add corn, green beans and peas. Simmer for 10 minutes. Add noodles and cheese, allow cheese to melt and remove from heat. Sprinkle with chives and serve.
