- 10 Cloves Garlic -- roasted
- 1 Large Red Onion -- roasted
- Olive Oil -- for roasting
- 2 Pounds Roma Tomato -- chopped
- 2 Tablespoons Balsamic Vinegar
- Salt And Pepper -- to taste
- 1 Pound Spaghettini -- cooked
- Parmesan Cheese -- to taste
Directions peel and mash roasted garlic. peel and chop the onion. place garlic, onion and tomatoes in a skillet and fry until most of the liquid evaporates. add vinegar and cook for 2 more minutes. add salt and pepper. Serve of pasta and apply parmesan cheese liberally. Serves 4 Time to Make 0:00
