Morrocan - Seffa Merdurma (Fine Grain Couscous With Chicken) adapted from Couscous and Other Good Food from Morocco by Paula Wolfert
Description Ingredients
- 2 Pounds Couscous -- Cooked
- 2 Pounds Chicken -- Cubed
- Salt And Pepper -- To Taste
- 1/2 Teaspoon Ginger
- 1 Pinch Saffron
- 1/2 Teaspoon Turmeric
- 1 Large Onion -- Grated
- 1/2 Teaspoon Cinnamon
- 3 Tablespoons Butter
- 3 Cups Chicken Stock
- Confectioner's Sugar
- Cinnamon
Directions Saute in butter , chicken, salt, pepper, ginger, saffron, turmeric, onion and cinnamon until the chicken is well browned. Add broth and simmer for 30 minutes. Serve over couscous, sprinkle with sugar and cinnamon. Serves 4 Time to Make 0:00
